I've been eating these babies for some time now and found out that with very small modifications you can use them as so much more than "just" oopsies:-)
The basic recepee:
3 eggs
1 table spoon baking powder
200g cream cheese (full fat)
1 table spoon linseeds
a pinch of salt
1. Seperate the yolks from the whites.
2. Mix the egg whites with the salt until you dare putting the bowl upside down over your head.
3. Mix the yolks with the rest of ingredients.
4. Gently stir the yolk mass with the egg whites.
Make 6-8 oopsies.
Bake for about 12 minutes or until golden at 200 degrees celcius/ 390 degrees fahrenheit.

Now for the fun part:
Suggestion 1.
By adding some vanilla and some stevia (perhaps a couple of blueberries) you'll get some nice pancakes that you can serve with whipped creme:-)
Suggestion 2.
By making just one big oopsie you can turn it to a pizza buttom. bake for 12 minutes, take out, put your toppings on and bake for 20 minutes:-)
Suggestion 3.
Use a cream cheese with flavour (urbs, toscana, chilli etc.) and add some grated cheese and/or fried bacon to the egg yolk mass. That way you'll get some very tasty buns that you can use for your lunch:-)
Suggestion 4.
By adding a bit of sesame on top you can make your own burger buns - very tasty and so easy!
Suggestion 5.
If you drop the baking powder from the recipee and make the oopsies more rectangular you'll end up with a sort of tortillas that you can make a delicious wrap with:-)
- Try it with some chicken, asparagus and some greens!
Okay, that's just what I could find from the top of my head!
But it gives you an idea of how versatile this recipee is:-)
